Chef Greg Couillard’s intriguing restaurant has earned kudos from a host of local and international critics. Sleek and slightly exotic, the space itself is gorgeous and helps set the tone for food that is preceded by its aroma. Spice takes center stage – not necessarily hot spice, although there are dishes with more than a little kick. Couillard goes for multi-layered flavors with highlights and undertones of everything from cardamom and Scotch bonnet peppers to coconut and cumin. The menu changes frequently, but exhibits Asian, Caribbean, Indian and African influences. The adjacent Manyata is operated by Couillard’s partner David Nganga – they share a kitchen and a similar culinary philosophy. |
